Nothing says Valentine’s Day like chocolate – especially an opportunity to learn all about the sweet stuff.

A popular online seminar by Jordan LeBel, a professor at Concordia’s John Molson School of Business, continues to provide a multimedia and sensorial experience for anyone who’s ever wanted to learn more about chocolate. All participants receive a complimentary premium tasting kit by French chocolatier Valrhona.

Called "The World of Chocolate: Explore, Experience, Enjoy," the eConcordia seminar can be followed over four hours via computer. LeBel covers topics such as the birth of chocolate, European chocolates, American chocolates, the manufacturing of chocolate and recipes. He also reviews tasting techniques and provides suggestions for pairing chocolate with alcohol.

LeBel has dedicated 15 years of his career to the academic study of people’s love affair with chocolate. His expertise has been sought by leading chocolatiers, big and small, around the world.

"One of my goals with this course is to dispense with outdated stereotypes that only Belgian or dark chocolate is worthy of real connoisseurs,” says LeBel. “There are amazing chocolates, dark and milk, produced all over the world."
